This banana bread has been the most popular recipe on Simply Recipes for over 10 years. Thousands of people make it every day. Why?

Because it really is the best banana bread recipe, period. You can mix everything in one bowl, you can vary the amount of sugar or bananas. And the secret to its great flavor? Melted butter.

The beauty of this banana bread recipe is you don't need a fancy mixer! A mixing bowl, a fork to whisk the eggs, and a sturdy spoon to mix the batter are all you need. The sugar amount is flexible. The original recipe called for a cup of white sugar, but most people, including me, do just fine with 3/4 cup, and many are happy with 1/2 cup.

You can toss in a cup of chopped nuts, raisins, or chocolate chips if you want, or put the batter into muffin tins and make banana nut muffins instead. You can even go a step further and make chocolate banana bread.

I was given this banana bread recipe years ago from my friend Heidi H, who, many years before, had begged the recipe from a ski buddy’s mother—Mrs. Hockmeyer. Thanks Heidi!

The Backstory on the #1 Banana Bread Recipe

All these years later, we were curious to know more about who Mrs. Hockmeyer is, and how Heidi got her recipe in the first place. You can read all about it in this story.

The Best Loaf Pan for This Recipe

This recipe calls for an 8x4-inch loaf pan, which produces a tall loaf. The recipe will also work in an 8 1/2x4 1/2-inch loaf pan, producing a slightly shorter bread. Since the pan is a bit larger, the bake time is shorter: 47 to 57 minutes. A 9x5-inch pan will yield an especially short but still delicious bread; bake for 45 to 55 minutes.

This recipe calls for an 8x4-inch loaf pan. If you are baking in an 8 1/2x4 1/2-inch pan, bake for 47 to 57 minutes. If baking in a 9x5-inch pan, bake for 45 to 55 minutes. Note that the larger pan size will produce a flatter loaf.

The best bananas to use for banana bread are those that are overripe. The yellow peelsshould be at least half browned, and the bananas inside squishy and browning.

Ingredients

  • 2 to 3 medium (7" to 7-7/8" long) veryripe bananas, peeled (about 1 1/4 to 1 1/2 cups mashed)

  • 1/3 cup (76g) butter, unsalted or salted, melted

  • 1/2 teaspoon baking soda (not baking powder)

  • 1 pinch salt

  • 3/4 cup (150g) sugar (1/2 cup if you would like it less sweet, 1 cup if more sweet)

  • 1 large egg, beaten

  • 1 teaspoon vanilla extract

  • 1 1/2 cups (205g) all-purpose flour

Method

  1. Preheat the oven to 350°F (175°C):

Bake for 55 to 65 minutes at 350°F (175°C), or until a toothpick or wooden skewer inserted into the center comes out clean. A few dry crumbs are okay; streaks of wet batter are not. If the outside of the loaf is browned but the center is still wet, loosely tent the loaf with foil and continue baking until the loaf is fully baked.

  5. Cool and serve:

Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve. (A bread knife helps to make slices that aren't crumbly.)

Wrapped well, thebananabreadwill keep at room temperature for 4 days. For longer storage, refrigerate the loaf up to 5 days, or freeze it.

FAQs

What is the best pan to bake banana bread in? ›

The CORRECT Pan to use for Banana Bread

The pan I recommend: A light-colored METAL 9 by 5-inch loaf pan. Anything too dark in color will risk scorching the edges. Glass and ceramic loaf pans: Take MUCH longer to bake – upwards of 15 to 20 minutes.

Why are older bananas better for banana bread? ›

Ripe bananas are not only softer and easier to mash and blend into a batter, but they are also sweeter, which is why baking recipes specifically call for ripe bananas in ingredient lists. As the bananas ripen, the fruit converts starches to sugars, making them sweeter and more flavorful.

Why does banana bread crack when baking? ›

In the oven, the outside begins to cook much faster than the inside; the crack is from the inner batter rising and releasing steam through the semi-cooked outer batter.

Why does my banana bread take so long to bake? ›

Banana is full of moisture. It takes longer for moist cakes to be fully cooked. Use a tester inserted in the center of the cake to make sure it is done before taking it out of the oven. My banana bread baked in a standard loaf pan takes about 70 minutes at 350°F to be done.

Is it better to bake banana bread in a glass or metal pan? ›

In fact, using glass or even ceramic baking pans for certain recipes, such as brownies or banana bread, may create adverse results! This is because they take LONGER to conduct heat. Often times the edges become overcooked before the heat has transferred enough to cook through the center.

Should I use a glass or metal pan for banana bread? ›

Metal pans are better heat conductors than glass pans, meaning the food inside cooks more evenly. Most baking recipes for cakes, muffins, cupcakes, coffee cake, banana bread, and brownies call for metal bakeware.

Can bananas be too over ripe for banana bread? ›

Indeed, there is such a thing as a banana that's too far gone even for baking. That's why you should know just which levels of banana ripeness are actually good to use for banana bread. Visual checks can be tricky. Bananas can go from yellow with brown spots to totally black and still be okay to eat and use for baking.

How ripe should a banana be for banana bread? ›

Let the bananas ripen (and overripen) at room temperature. Depending on the weather, this could take a few days, or up to a week. The best bananas for banana bread aren't yellow; they're black. Or they're at least streaked with black/brown, with just the barest hint of green at the stem.

When not to use bananas for bread? ›

Mold on bananas is fuzzy white, gray, or greenish—it looks a lot like mold on bread. If a banana smells rotten or fermented or is leaking fluid, it's time to say goodbye. If the fruit inside, not just the peel, is black, that's a sign that your banana is too far gone to safely eat.

What does it mean when my banana bread sinks in the middle? ›

There are a variety of reasons why yours may be sinking on cooling but it is most likely that it isn't quite fully baked. Banana bread tends to form a firmish crust on the outside, so even if it looks baked it may not quite be done which means that it will sink as it cools.

What if the bottom of banana bread is not cooked? ›

It is pretty simple to salvage an undercooked bread and create a decent loaf. Heat the oven to 350 F, return the bread to the oven, and bake for another 10 to 20 minutes. This will work even if the loaf has cooled, which is similar to par-baking bread.

Why won't my banana bread cook in the middle? ›

Using too much banana could make your bread heavy and damp in the center, causing it to appear undercooked and unappealing. If you have bananas leftover, you can always freeze them for later use.

Can I bake two loaves of banana bread at the same time? ›

You can double a standard banana bread recipe, as long as you bake the batter in two same-size loaf pans, or one after the other.

What happens if you put too much baking powder in banana bread? ›

Too much baking powder can cause the batter to be bitter tasting. It can also cause the batter to rise rapidly and then collapse. (i.e. The air bubbles in the batter grow too large and break causing the batter to fall.)

How long should banana bread sit after baking? ›

Let it cool for 10 minutes — this helps the loaf solidify and makes it easier to remove from the pan. Remove from pan and cool another 10 minutes. Grasping the parchment paper sling, lift the loaf out of the pan and place on the cooling rack. Cool for another 10 minutes before slicing.

What material pan is best for baking bread? ›

Material: Stainless steel, cast iron, and aluminum are excellent choices for high-quality loaf pans. If you want to use your loaf pan for other purposes, check to see what temperature is considered safe. For instance, most nonstick bakeware isn't broiler-safe.

Does a banana bread pan need to be greased? ›

For a picture-worthy loaf of banana bread, don't go overboard with greasing your loaf pan. Grease the bottom of the pan just ½ inch up the sides for a uniform loaf with a slightly rounded top. If you grease all the way up the sides of the pan, the loaf can sink, resulting in a flat top.

How do you keep banana bread from sticking to the bottom of the pan? ›

It is important to thoroughly coat the sides and bottoms of the pan with solid shortening or non-stick cooking spray, particularly in the corners. A missed spot will result in sticking.
